Ingredients
To make the mixture of chermoula
2 red onions, chopped
3 cloves of garlic
small knob fresh root ginger , peeled
100ml/3 1/2 fl oz lemon juice (about 3 lemons)
100ml/3 1/2 fl oz olive oil
1 tablespoon cinnamon, honey, cumin and turmeric.
1 teaspoon hot chilli powder
handful coriander , chopped
To make the tagine
1 tbsp olive oil
3 carrots, cut into chunks
3 large parsnips , cut into chunks
3 red onions, cut into pieces
2large potatoes , cut into chunks
4 leeks , ends cut and cut into pieces
12 dried prunes, dates or figs
2 sprigs mint, leaves only finely chopped
Methods
STEP 1
In order to make the Chermoula blend the ingredients in blender. Pre heat oven to 220C/fan 200C/gas 7. Pour the oil and the vegetables into a casserole with a lid that can be heat-proofed and cook on the stove until lightly brown, about 7 minutes. You might have to do it in two separate batches.
STEP 2
The chermoula paste should be added to the casserole, as well as dry fruit. Add 400ml of water Cover with a lid, and bake at a low temperature for about 45 minutes. Reduce the heat to 180C/gas 4 or fan 160C/180C. Cook for an additional 45 minutes. Sprinkle it with mint. Serve it as a stand-alone dish or with couscous or bread.
